Miracle Ranch Chicken
Recipe By : Real Food for Real
People

Amount Measure Ingredient -- Preparation Method

2 pounds Chicken, skinless light meat -- (boneless if
desired)
1/2 cup Miracle Whip®
1 tablespoon Ranch-style Dressing Mix
Water
Vinegar
Boil chicken pieces in approx 3/4 - 1 cup white vinegar,
and enough water to
cover, for 10 - 15 minutes. Drain well. Mix Miracle whip
and seasoning mix
together in a small bowl; set aside. Prepare barbecue
grill with oil or non-
stick cooking spray. Place chicken pieces onto grill,
and brush generously with
mixture. Turn over immediately, and brush other side
generously, making certain
to coat sides as well. Grill over low-medium heat 5-6
minutes, or until lightly
browned on bottom, then turn and grill other side 5-6
minutes. Serve hot.

I once saw a recipe for casserole that had choices of ingredients in
rows- meats,
veggies, sauces- and you put them together the way you wanted to for
making your
own meals. Do you know of anything like this?

Hi,
I will be moving out to go to college at the end of summer and want to
put
together a book of easy recipes for one or two that I can make for my
roommate
and myself. I will be very tight on money, so cheap stuff would be good.

I have a family fav that came from Taste of Home yrs ago called
Cheeseburger Loaf
Cheeseburger Loaf
1 long loaf of cooked French bread
1 lb ground meat, cooked & drained
1 jar of pizza sauce
1 pkg pepperoni
shredded cheese
Gently slice a top of off the bread and set aside. Scoop out the
inside of the
loaf leaving a shell. Discard the inside or use for bread crumbs
later. Mix other
ingredients together except cheese and pepperoni, fill the loaf with
mixture. Top
with pepperoni and finish with cheese. Put top back on and bake in
preheated
oven of 350 degrees for about 20 minutes or until cheese is melted.
Please note
that you can use your own type of fillings, sometimes, we use bar-b-que,
or
sloppy Joes. When it is done, slice into serving size pieces.
Another thing that
u can do for ppl coming in @ different times is use crock pot
recipes.

Re: Biscuits using oil
I've been using this recipe ever since you published it earlier this
year. My
family loves them and I think they are healthier than biscuits using
shortening.

Farm Biscuits
Recipe By : Real Food for Real People

3 cups Flour
6 teaspoons Baking Powder
1/2 teaspoon Salt
6 tablespoons Vegetable Oil
1 cup Milk
In a large mixing bowl, mix dry ingredients together, form a well in
center and
pour in milk and vegetable oil, then mix together all ingredients.
Be careful to
mix only until JUST BLENDED, or biscuits will be tough. Roll dough
out on flat,
floured surface; cut out with biscuit cutter or the bottom of a
large drinking
glass, and place onto baking sheets prepared with non-stick cooking
spray. Bake
at 400 degrees F for 12 - 15 minutes.
Yield: "24 biscuits"

Mary in Azusa asked for a
biscuit recipe using oil rather
than lard, shortening,
etc. My husband makes the best biscuits I've ever eaten and here's
his recipe:
2 to 2 1/2 c flour
3 heaping tsp baking powder
1/2 tsp salt
1/3 to 1/2 c oil
1 1/2 c milk (we use powdered milk)
Sift the flour, salt and the baking powder into a large bowl.
They're cheap and
the biscuits will be much fluffier after sifting. Add the oil and
milk until you
have a fairly stiff mixture. If the mixture is too runny, you can
add some more
flour to thicken it.
In another bowl, pour some flour into the bottom (roughly 1/2 cup).
With a large spoon, scoop out enough of the biscuit mix to make a 2"
ball. Drop this into the small bowl and roll the ball of mix around,
covering the
outside with flour.
Pat this into a 1/2 inch thick patty and place into a baking pan.
Repeat this until you have used up all the biscuit mix. Place this
into a
preheated oven at 325 to 350 and bake for 15-30 minutes or until
biscuits begin
to brown on top.

Mary in Azusa is looking for recipes using cooking oil. Here is one
from an old
Mazola Corn Oil booklet.
Easy-Mix Biscuits
1 3/4 cups sifter all-purpose flour
2 tsp baking powder
1 tsp salt
2/3 up milk
1/3 cup Mazola Corn Oil (other vegetable oils will work)
Pre-sift and measure the 1 3/4 cups of flour. Then sift together the
flour,
baking powder and salt into a mixing bowl. Combine milk and oil and
pour at once
over the flour mixture. Mix with fork to make a soft dough. Shape
lightly with
hands to make a round ball. Place on waxed paper and knead lightly
ten times or
until smooth. Pat out into half inch thickness or roll between two
sheets of
waxed paper. Remove top sheet of paper and cut out biscuits with an
unfloured
two-inch cookie cutter. Place biscuits on an ungreased cookie sheet,
close
together for soft biscuits or well apart for crusty ones. Bake at
450 deg. F.
for 12 to 15 minutes. Makes 20 biscuits.
