Grilled Onion Potatoes

Amount Measure Ingredient -- Preparation Method

8 medium Potatoes -- baking style
2 small Onions -- sliced
Salt and Pepper -- to taste
8 ounces Italian Salad Dressing, low calorie -- Zesty Style

Cut each potato into five slices. Place onions between slices and sprinkle with salt and
pepper. Reassemble each potato; place on a double layer of heavy-duty foil (about
12-inches square).

Pour about one ounce salad dressing over each potato. Wrap foil around potatoes and
seal tightly. Grill, covered, over medium heat for 50 to 60 minutes or until potatoes are
tender.

Per Serving (excluding unknown items): 137 Calories; 3g Fat (18.8% calories from fat); 3g
Protein; 26g Carbohydrate; 2g Dietary Fiber; 2mg Cholesterol; 231mg Sodium.

I am in love with a pizza that I get off the big yellow freezer truck that plies its trade in the
midwest. I am not sure if I can say the name is Schwann's or not. The pizza is a
mushroom/Spinach pizza that sells for about $7.00. We have to be frugal now, and
wonder if anyone knows how this is made. It does not have a tomato sauce on it, which is
good for my ulcer, and is so very good. If anyone knows what they use for a base, please
let me know as I would love to make this pizza at home and add more mushrooms. I
would appreciate any help I can get with this. I, of course, love your ezine and have gotten
a lot of help from it. Thanks in advance for all help,

I love this site, I almost always get the information or recipe I need. I recently (within the
last month or so) ran across a recipe for a Chocolate Cake with Raspberry Topping. The
cake was baked in a 9X13 pan then topped with a filling made with fresh (or possibly)
frozen raspberries. I mentioned it to my son and he wants it for the groom's cake at his
wedding. I don't know what site I found it on, and I didn't save it. If anyone has a good
chocolate cake with raspberry topping, I would be most appreciative.

This is for Annie and her wonderful Alz. patients. I have used this recipe for many things,
including even a sweet table at a baby shower. You can vary the cake mixes for different
flavors, use different frostings, even top each with a flavored chip or nut. Here is the
recipe:

Cake Mix Cookies

1 standard size box cake mix, any flavor
3/4 Cup vegetable oil
1 egg

Whisk cake mix until lumps are gone. Add oil and egg and mix until well combined. Roll
with fingers into balls and put on greased cookie sheet. (I use non-stick cookie sheets
that have no need to be greased.) Place in refrigerator until slightly chilled as dough can be sticky to handle. Bake at 350 oven for 10-12 min.  The balls I use are approximately the size of a quarter. Ideas: white cake mix tinted with pink food coloring then iced with chocolate or white frosting. Lemon cake mix with lemon frosting. Orange cake mix topped with a chocolate chip. Chocolate cake mix - roll ball in confectioners sugar before baking and dust with more sugar when cool. As you can see, the possibilities are as varied as your imagination. Balls can be dipped in finely ground nuts.

This is for Annie who was looking for cookies made from cake mix. These are some
recipes I had in my files, although I haven't tried them personally.

Angel Macaroons

1 16 oz pkg one-step angel food cake mix
1/2 c water
1 1/2 tsps almond extract
2 c flaked coconut

In a mixing bowl, beat cake mix, water and extract on low speed for 30 seconds. Scrape
bowl; beat on medium for 1 minute. Fold in the coconut. Drop by rounded teaspoonfuls
onto a parchment paper-lined baking sheet. Bake at 350 for 10-12 minutes or until set.
Remove paper with cookies to a wire rack to cool.

variation: use 1/2 cup soda pop instead of the water for different flavors.
Angel food cake mix with cherry soda. Decorate with a cherry on top.
Use lemon lime soda and lemon extract instead of the almond and a little bit of yellow
food color for a lemon macaroon. Your only limited by your imagination as to what flavor
and color your cookies are by mixing and matching the soda pop and extracts.

Four-Ingredient Chocolate Chip Cookies

Makes About 3 Dozen Cookies

1 box Yellow Cake Mix
1/3 cup Oil
2 large Eggs
12-oz. package Chocolate Chips

Pre-heat oven to 375-F degrees. Prepare several cookie sheets for baking. Blend together
the cake mix, oil, eggs, and chocolate chips. Drop by the spoonful onto the cookies
sheets, about 2 inches apart. Bake for 11 minutes, or until the edges are brown.

FUDGE RUM BALLS

1 pkg deluxe butter fudge cake mix
1 cup finely chopped pecans or walnuts
1 Tbsp rum extract
2 cups sifted confectioners sugar
1/4 cup unsweetened cocoa

Preheat oven to 375 degrees. Grease and flour 13x9x2 inch pan. Prepare, and bake the
cake following package directions. Cool. Crumble cake into large bowl. Stir with fork to
break up into fine crumbs. Add 1 cup nuts, rum extract, sugar, and cocoa. Stir until well
blended. Shape heaping tablespoonfuls mixture into balls. Garnish by rolling balls into
finely ground nuts or chocolate sprinkles, or just leave plain. NOTE: You may substitute
REAL RUM for the extract if desired.

Cream Cheese Cookies

1/4 c butter or margarine, softened
1 8 oz package cream cheese, softened
1 egg
1/4 tsp vanilla
1 pkg (regular size) yellow or devils food cake mix

Cream butter and cheese. Blend in egg an vanilla. Add cake mix (dry), 1/3 at a time mixing
well after each addition. Cover; chill 30 minutes or more. Heat oven to 375. Drop by scant
teaspoonful onto ungreased baking sheet. Bake 8-10 minutes or until light brown. Cool
slightly before removing from baking sheet.

Cake Box Cookies 1

1 box cake mix (any flavor)
1/3 cup oil
2 Tbs water
1 egg

Mix in large bowl. Use small scoop and bake for 13 min at 350 degrees. Use your
imagination and knead different things into small amounts of this cookie dough on the
cutting board. Suggestions: yellow cake mix -- chopped snicker bars, butterfingers, m &
m's, chopped candy canes, chocolate chips, nuts, roll in cinnamon/sugar, etc. Chocolate
cake mix -- white chocolate chips, nuts, maraschino cherries, etc. Spice cake mix --
raisins, nuts, dates, etc.

CAKE BOX COOKIES 2

1 box cake mix (any flavor)
2 eggs
1/2 cup oil
toppings to mix in

Preheat oven to 350F. Mix ingredients in bowl. Use small scoop and drop by rounded
scoops onto cookie sheet 2" apart. Bake for 12-13 min. Remove and cool.


 

Hi,

I will try and help Annie who needs a quick cookie recipe for her group. This recipe could
be changed using different flavors of cake mix and is perfect for what she needs.

PUDDING COOKIES

1 yellow cake mix with pudding
1 egg
3/4 c. oil
1/4 c. brown sugar

Combine all ingredients. Either drop or roll out and use cookie cutters. Bake at 350
degrees until lightly brown about 10 minutes.

Low Cal Fudge Sauce

Unsweetened cocoa powder does not contain cocoa butter, and so has substantially less
fat than chocolate. This hot fudge sauce, sans cocoa butter, has a slightly powdery finish
and less richness than its higher-fat counterparts, but it will certainly satisfy the chocolate
craving.

5 tablespoons warm water
3 tablespoons unsweetened cocoa powder
4 tablespoons brown sugar
1 tablespoon arrowroot, mixed with 2 tablespoons water

Mix 5 tablespoons warm water, unsweetened cocoa powder and brown sugar. Bring just
to a boil over low heat Mix arrowroot and 2 tablespoons water. Stir in arrowroot mixture,
return to the heat and whisk until thickened. Remove from the heat and whisk until
smooth. Makes 3/4 cup sauce Calories: 75

I am guessing that you could use Splenda for baking or Brown Sugar Twin and really lower
the calories.

For Annie, who wanted a simple cookie recipe using a cake mix, I found this in my
collection.

Double Chocolate Chip Cookies

(Makes 3-1/2 to 4 dozen cookies)

1 pkg. Duncan Hines Butter Recipe Fudge Cake Mix*
1/2 c flour
2/3 c oil
2 eggs
1 c (6-oz. pkg.) semi-sweet chocolate chips

Preheat oven to 375 F. Blend cake mix, flour, oil and eggs. Stir in chocolate chips. Drop
from a teaspoon onto an ungreased cookie sheet. Bake at 375F for 9-11 minutes, until
cookie tests done with a toothpick. Do not overbake. Cool on cookie sheet about 1
minute, then remove to rack to finish cooling.
*This is an old recipe that I cut from the cake mix box so I'm not sure if this mix is still
offered in stores, but I'm sure you could improvise.
