Dear Friends,

I love this column and read it daily! I have a big question. Does anyone have a good
recipe for scalloped potatoes? I am a good cook in general, but my scalloped potatoes
are awful! any good recipes would be appreciated. Thanks,

Alisa

Hi Kaylin,

I have been enjoying the daily recipes and look forward to each issue. I have a son who is
looking for a variety of recipes using Ramen Noodles. I would appreciate any and all
recipes using the Ramen Noodles . My son calls them the bachelor's staple food.
Thanks so much to all.

Linda

Hello all!

I was hoping some of you might have some recipes for hot cereal. I'm looking for Malt O' Meal type, Cocoa Wheats, Cream of Wheat. My kids just love these types of cereal! Also granola would be good, or any type of cereal I could make here at home. Cereal prices have gotten outrageous if not on sale! With 4 boys to feed it is so expensive, and I don't buy cereal unless it is on sale anymore. I would also be willing to try other grains. I have heard you can eat millet, but have never seen a recipe. Thanks for all your help in advance!

Jane

For Early,

I always try to find old-fashioned recipes to try, and, although finding this one stumped
me for awhile, I found it! I hope it's the right one :)

Slippery Jims (Pickles)

Peel large cukes that have turned yellow. Cut in half and clean out seeds. Salt down
overnight. Cook cukes until transparent in 3 cups of water, 1 cup vinegar and yellow food
coloring. Cut to size you want.

Boil 1 cup vinegar and 1 cup sugar with pickling spices to make the syrup. Put in clean
sterilized jars. Pour over hot syrup and seal.

I got this one from my friend Janice and my family can't get enough of them. If it isn't the
one he wanted it is one he will be glad he has!

Spicy Pretzel Sticks

1# of pretzel sticks
1/2 package Hidden Valley Ranch dry salad dressing mix
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 cup salad oil

Mix all ingredients together and spread in jelly roll pan or large cookie sheet. Bake in
preheated 250 degree F oven for 1 1/2 hours, stirring every half hour.

Recipe for Walt who was looking snack mix with dry Ranch Dressing:

At Christmas time a friend gave us a bag of party mix which he called "Trash." It was
delicious and one of those things that the more you eat the more you want. I'm going to
make it for the Super bowl as it makes a lot and can be made ahead of time. The recipe
is flexible and you can add other cereals or crackers or eliminate anything you wish.

RED'S TRASH (Ranch Party Mix)

4 cups of the following cereal:
Rice Chex
Corn Chex
Wheat Chex
Crispix
Kix
Cherrios
2 cups of the following:
Sugar Pops
Triscuits (broke in half)
Goldfish
Cheddar cheese crackers
Peanuts
Bagel chips
Little pretzels
Oyster crackers
Wheat thins or other desired crackers

Combine everything in a LARGE container or plastic bag. Drizzle with 1 1/2 cups of
Crisco oil. Mix well being careful not to break up pieces. Mix 2 packages of dry Hidden
Valley Ranch Salad Dressing & Seasoning Mix and 4 Tablespoons dried dill weed in a
small bowl. Sprinkle slowly over cereals, stirring to coat. Store in tightly closed
containers or plastic bags. If you want to make a really big batch use the entire boxes of
cereal, crackers, and other items. Best to divide into three containers then add the oil,
Ranch Mix and dill weed as above.

This is for Walt, who wanted the ranch/garlic snack mix recipe. It's VERY flexible, so
use whatever ingredients you like as long as the total quantity is about the same.

Bugles Snack Mix

1 1/2 lbs. crisp mini pretzels or matchstick pretzels
12 oz. Bugles cone-shaped snack chips OR Chex-style corn cereal
6 oz. goldfish crackers OR small, square cheese crackers
1 can roasted peanuts, cashews, or mixed nuts
3/4 c. vegetable oil
1 envelope dry ranch salad dressing mix
1 tsp. garlic powder
OPTIONAL: Dash of dried dill OR crushed red pepper

In VERY large bowl or roaster pan, combine oil, dressing mix and seasonings. Toss in
remaining ingredients until coated. Heat in 300 degree oven for about 30 minutes, stirring
a couple of times, or until heated through. Allow to cool and store in airtight container.

NOTE: Many recipes skip heating in oven, but it allows seasonings to absorb better &
leaves less oil on the surface. It's worth the small amount of effort.
