Inside-Out Stuffed Peppers
Recipe By : Real Food for Real People
Serving Size : 6 Preparation Time :0:00

1 pound Lean Ground Beef
1/2 cup Onion -- chopped
16 ounces Tomatoes, canned -- stewed, chopped
1 large Green Bell Pepper -- chopped
1/2 cup Long-Grain Brown Rice -- uncooked
1/2 cup Water
2 teaspoons Worcestershire Sauce
1/2 teaspoon Salt
1/4 teaspoon Black Pepper -- freshly ground
4 ounces Cheddar Cheese -- shredded
In a large skillet, brown beef; drain. Transfer to a greased 2-quart
casserole. Add
the next 8 ingredients. Cover and bake at 350 degrees F, for 1 hour or until
rice is
tender. Uncover and sprinkle with the cheese; return to the oven until
cheese
melts, about 5 minutes.

I lost my recipe for pop up or pop in pizza. Can someone help me. My
recipe files got erased. It is one of my favorite recipes. Thank you.

In the interest of being
healthier, I'm looking for more veggie dishes. Preferably side dishes
that don't have a ton of calories. You can only eat steamed veggies
for so often, before you going looking for something else) Thank
you!! (By the way, I love the ezine and look
forward to seeing it in my mail box!)

Hello!
We just purchased a juicer and hope to make some yummy, healthy homemade
juices! We are especially looking for juice recipes which include
vegetables and would appeal to our son's taste
buds! Does anyone have a favorite juice recipe
he/she could share? Thank you!!

When I was growing up, we called them Congo Bars.
They were a family favorite, and so easy to make. This is my mother's
recipe.
Congo Bars
2 3/4 cups Flour
2 1/4 tsp. Baking Powder
1/2 tsp. Salt
2/3 cup melted margarine
1 16 oz. Pkg. Dark Brown Sugar
3 eggs
1 cup chopped nuts ( I omit these)
1 6 oz. Pkg. Chocolate Pieces ( I use 12 oz)
Grease and flour a 13 X 9 pan. Melt margarine. Sift flour, baking powder
and salt. Add melted margarine to sugar. Add eggs 1 at a time and beat
well. Add dry ingredients and mix until
blended. Stir in nuts and chocolate pieces. Spread in
prepared pan. Bake 25 to 30 minutes in a 350 degree oven. Cool in
pan on wire racks. Cut in bars.
I prefer to use my stoneware 13 X 9 pan. No need to grease and flour and
they come out perfect every time!!!

Stacey here are a few suggestions for your veggie
problem:
1) Top steamed veggies with just a little grated cheese. I like Monterey
Jack; Cheddar; American; and Swiss.
2) Pour some dry oatmeal into a dry fry pan
and toast the oatmeal, stirring a lot, until browned but not burned. Top
your veggies with a sprinkle of this to give them
a "nutty" flavor.
3) Use some of the spice blends from the dollar store to top the veggies
for a little different flavor.
4) Instead of steaming your veggies, roast them together with a little
oil & spices in the oven. They just seem to taste different then.
5) Coat the raw veggies with a mixture of flour, cornmeal, salt &
pepper. Then fry in just a little oil in your fry
pan. (If you put the flour mixture in a Ziploc bag then
add the veggies, your kids can shake the coating on the veggies
to help you!)
6) Chop up some nuts [any kind, peanuts, almonds, cashews, pecans, etc.]
Then do a stir-fry of the veggies in a little oil and a few chopped
nuts. Otherwise you can just top the veggies with a little sprinkle of
the nuts.
7) Top your veggies with a peanut butter sauce. Check your cookbooks for
a peanut butter sauce recipe.
8) Try making unusual combinations of vegetables. Have your tried
mashing together turnips and potatoes; or parsnips & potatoes; or
carrots & potatoes? How about Brussels sprouts
and cauliflower? Use your imagination and don't be afraid
to try different combinations, or different types of preparation,
or a different presentation. Have fun!

I got this yummy recipe from my friend Janelle
Butler, along with an explanation of the recipe name.
Caramel Brownie Recipe (aka Dead Man Brownies.)
Pre-heat oven to 350 degrees
6 oz pkg Semi-sweet chocolate chips
1 German Chocolate Cake Mix
¾ cup Margarine or Butter Melted (I use butter)
1 pkg of Kraft Caramels (I find the Kraft brand isn't gritty when melted)
1 small can of Evaporated Milk (I use sweetened condensed milk for more
sweetness)
In large bowl mix melted butter with cake mix and 1/3 cup of evaporated or
sweetened milk, mix well (if using sweetened condensed milk add a couple
tablespoons of water to the mix.) Pour ½ of the batter in a 13 x 9
inch cake pan. (I put my hand in a plastic
sandwich bag to evenly spread the batter.) Bake for 10
minutes. Melt caramels and 1/3 cup milk; pour on top of baked cake
mix. (the caramel will not spread so drizzle)
Top the caramel with chocolate chips. Put the
remainder of the batter on the top. (I find it easier to drop spoonfuls of
the stiff
batter and carefully spread with spatula). Bake for 15 minutes. Cool and
cut.
Now I must explain how these wonderful treats got the name
"Dead Man Brownies".
Before my mom lost her battle with cancer she was the secretary for our
church. She would organize everything, even the dreaded wakes. When my son
was 5 years old we went to visit
"Granny" and she was
preparing these wonderful brownies. Beau got to
taste them and loved them!! (I wonder why? All that sugar
and chocolate.) The next time we visited and she was making them
for a wake. Of course Beau wanted not just
one but the whole pan, she had to tell him that
they were for someone's family who's Grandpa had died. She made more soon
after that and when Beau saw the pan he blurted out, Hey!! Are
those the Dead Man Brownies?? That's what they've been called in our house
since. Enjoy!!

Re: Lillian's request for Congo Bars:
My mother-in-law has had this recipe for many years. She gave it to me 16
years ago when I married her son. I hope that it is similar to what you
remember.
Congo Squares
Melt in 2 quart saucepan:
I cup butter
2 1/2 cups brown sugar
add 3 eggs that were well beaten.
Let mixture cool then add these sifted ingredients:
3 cups sifted flour
2 1/2 tsp. baking powder
1/2 tsp salt
add:
1 cup nutmeats
1 package chocolate chips (2 cup size)
Bake in 101/2 x 15 1/2 pan. Bake at 325 degrees for 25 to 30 minutes. When
almost cool, cut into squares.
